ServSafe Food Handler study tips

Written by our team
Study order
Start with Time and Temperature, the biggest chapter on this site, because its numbers show up across the whole test. Then study Personal Hygiene and Cross-contamination and Allergens, which cover what you do with your hands and food every shift. Finish with Basic Food Safety and Cleaning and Sanitation, and then take a full 40-question mock.
Topics people often miss
Time and Temperature is where most numbers are: the 41°F to 135°F danger zone, cooking temperatures of 165°F, 155°F, and 145°F, and the two-stage cooling rule (2 hours to 70°F, then 4 more hours to 41°F). In Cross-contamination and Allergens, practice the refrigerator storage order from top to bottom. In Personal Hygiene, learn the handwashing steps in order and which symptoms you must report.
Test day tips
The official assessment has 40 questions and no time limit, so read each question fully and do not rush. You need 75%, which is 30 correct answers, so you can miss up to 10. If two answers look right, pick the one that keeps food safest, such as the colder holding temperature or the more frequent handwashing.

ServSafe Food Handler exam trends

Questions focus on everyday kitchen tasks and the numbers behind them: the temperature danger zone (41°F to 135°F), minimum cooking temperatures, safe cooling and reheating, how to wash hands, when to change gloves, which illnesses to report, how to store food to prevent cross-contamination, the major food allergens, and how to clean and sanitize. The temperatures and times on this site follow the U.S. FDA Food Code. The chapters on this site follow the five course sections, but the weights are study estimates, not official numbers.

Start with Time and Temperature, because many questions use its numbers. Make one card with every temperature and time (41°F, 135°F, 165°F, 155°F, 145°F, 2 hours, 6 hours, 20 seconds) and review it daily. Then practice the order of handwashing and the order for storing food in the refrigerator. Before you take the real assessment, take a full 40-question mock and aim for 34 or more.
